Ingredients
1 cup raw cashews
10 pitted Medjool dates
1/4 cup cacao powder
2 tablespoons ground flaxseeds
1 teaspoon mint extract
pinch of salt
desiccated coconut or raw cacao powder for dusting
Instructions
Add all the ingredients to a food processor and process until the mixture sticks together.
Using a medium cookie scoop, scoop a ball and roll it between your palms. Place the ball on a tray. Continue until all the dough is used up.
Serve the balls plain or roll them in coconut or raw cacao powder for variety.
Store in an airtight container in the fridge or freezer.
